Solo Cooking – Salmon salad – My Cooking Adventures

Those of you who know me will be rightly suspicious about the top picture. Indeed, I didn’t take it. But as I mentioned in my first Adventures post, I am challenging myself with cooking this year.

One of the reasons I am not a fan of cooking is that it takes time and lots of ingredients. And if you factor solo cooking into this, it all becomes a bit pointless and exceptionally costly. BUT that is not my attitude for this year.

Here’s a little thing I cooked for myself the other weekend – a salmon salad. It was quick and easy, healthy, and required minimal prep and only a few ingredients.

What do you need to make this uber simple but wonderfully yummy dish?

  • however much smoked salmon you wish to eat; I took two slices
  • a bowl of mixed frozen vegetables
  • fresh basil
  • olive oil
  • whatever spices you fancy
  • a glass of wine – to drink – optional but recommended

I am not kidding – this is the recipe.

How to make the super easy salmon salad

Let’s start with the essentials – pour yourself a glass of wine. Solo cooking requires this 🙂

Prepare the ingredients in the amounts that you fancy – are you hungry, hangry, or just peckish?

Boil enough water for your vegetables and put the veggies in.

Sip on the wine, listen to the music, do a little dance.

Cut the salmon into stripes and add to a bowl or plate. I used a bowl. Add basil cut or shredded into smaller pieces. Add a teaspoon of olive oil, and the spices you like.

The vegetables should be cooked by now – make sure they are not overcooked, but nicely tender. Drain the veggies, and mix with the rest of the salad in your bowl or plate.

Ta Dah! That’s it! I must say this quick dish was super delicious – the basil definitely added a nice flavour to it.

What’s (solo) cooking next…

Because I don’t like spending time on cooking, I thought I needed to get myself a book that I will refer to for recipes.

And since I am nuts about Japan, and I don’t eat meat, I thought the only option is to get a vegan Japanese cooking book.

Here it is!

I must say that the volume of ingredients for the majority of the dishes freaks me out. Therefore, I shall be starting with something super simple and unsophisticated. The last thing I want is wasted food.

So watch this space! I am truly and seriously embarking on my cooking adventures 🙂
